Ragout of wild boar of the Gola Rossa and Frasassi Regional Natural Park
The wild boars are killed with the selective killing method in the Gola Rossa and Frasassi Regional Natural Park, using lead-free bullets to guarantee meat free of heavy metal residues, as required by the regulations of the Marche Region. The result is a sauce with a strong and characteristic flavour, but at the same time light, obtained thanks to a long marinade and delicate cooking, which enhance its qualities. This ragù is ideal to accompany dry or egg pasta, gnocchi, polenta or even a hot crust of bread.
