Cicerchia sauce
A delicate, spicy and herbal red sauce. Cicerchia is an ancient legume grown in central Italy (including Le Marche), it has obtained recognition as a traditional Italian agri-food product from the Ministry of Agricultural, Food and Forestry Policies; some, including the Cicerchia di Serra de’ Conti that we use, are also included among the Slow-food presidia.
Cicerchia is a legume halfway between a lentil and a chickpea, rich in fiber and good proteins, it has a delicate, spicy and herbal flavor with a creamy consistency.
This sauce is excellent with dry or egg pasta, but it’s delicious on a slice of toasted bread with a drizzle of olive oil.
Ideal for vegans and vegetarians.
