White goose and black truffle ragout
A white ragout with a pronounced and persistent flavour due to the goose meat and the long marinade of the meat itself, a slow, almost sluggish simmering (and cooking) make this a pleasant sauce. The black truffle, an underground mushroom loved by connoisseurs, goes perfectly with this ragout. Suitable with dry or egg pasta, gnocchi, crostini or polenta.
